After a great 8-year run, it was time to re-energize our sister bar next to Saxon + Parole – the gin bar Madam Geneva. We breathed new life into the space by turning it into Ghost Donkey, a Mexican-inspired mezcal and tequila bar.
Through our strategic analysis of the previous concept, we identified opportunity areas in design, operations, and F&B experience. We crafted a new food and beverage program that could utilize the existing kitchen in a fresh way.
Upholding the traditions of Mexican hospitality, focusing on creating a lively, fun, and welcoming environment that uplifts the guest experience from all angles. The end goal was to make every visitor feel welcome, energized, and ready to join the fun.
In 2020 Ghost Donkey New York was awarded imbibe Cocktail bar of the Year.
